Cheese of the Week: Tomme de Savoie

With this cheese of the week, you're delighting in a raw, cow's milk wheel from France's mountainous eastern region of Savoie in the Rhone Alpes that is protected by a PGI (Protected Geographical Indication).

Lightly pressed for a semi-soft texture and aged from 2-4 months. It's a mountain staple made from the skimmed milk left over from butter making. It radiates a rustic, earthy, simplicity with nutty tastes. Expect some tangy, slight citrus and mushroom notes, highlighted by the odors of a cave.

Tomme means smallish, roundish farmstead cheese, and is usually combined with the region or town of origin. Tomme de Savoie packs a bit of tang, along with earthy vegetal or dried fruit aromas depending on the seasonal Alpine grazing conditions.

The taste of the cheese varies throughout the year based on whether the milk comes from cows eating winter hay or fresh summer grass!

Accompanied by a Mondeuse wine, the Tomme de Savoie reveals its character and aromatic intensity. Long lasting on the palate, the wine with the taste of blackberry and violet helps to make these pairings powerful, fruity, and delicious!
