Led by molecular biologist Li Jieping at the International Potato Center (CIP) in Beijing, researchers are testing new potato varieties designed to thrive in a hotter, more unpredictable world. They’re growing potatoes in small pots, exposing them to high temperatures that mimic the future effects of climate change. The goal? These potatoes, though only half the size of a typical spud, are the result of three years of research. While heat exposure speeds up growth, it also impacts the crop's overall yield. The team is working to find the perfect balance to ensure a stable, heat-resistant potato that can survive extreme conditions.


This research matters because, globally, food security remains a challenge. The USDA reports that 824.6 million people still struggle with hunger, and climate change only worsens this crisis. In China, extreme temperatures have already hurt potato farmers, increasing the need for crops that can withstand the heat.


Though these climate-proof potatoes aren’t quite ready for the global market, the innovation is promising. If successful, it could lead to more resilient crops, helping farmers around the world secure their harvests amid climate change.
