We've talked about Jasper Hill Farm's Harbison once or twice on Curd Is The Word, so we were super excited to find out about the new, limited-edition Campfire Harbison cheese! Crafted from pasteurized cow's milk, Harbison is wrapped in a strip of spruce cambium, which is the interior bark layer of spruce trees. This fiery version is wrapped in spruce cambium that has been steeped in organic liquid smoke. All of the buttery, herbaceous flavor and ultra creamy, spoonable texture of classic Harbison with a toasty twist.
