Sid Cook of Carr Valley Cheese Co. is a fourth-generation cheesemaker, handcrafting cheese since he was just 16 years old. And, to this day, he prefers making cheese the same exact way as when he started: by hand.
Although Sid makes cheese the old-fashioned way, the cheeses themselves are anything but. “The artisan cheeses that we're doing...we just literally made them up!” Sid stated in an article by Wisconsin Cheese. “My passion is innovation, doing things other people weren't doing any place in the world—let alone here.”
Sid enjoys creating new and innovative cheeses, such as Glacier Wildfire Blue, a blue cheese with pepperoncino peppers, and Gran Canaria, an olive oil-cured cheese made with sheep, goat and cow's milk. All of Sid's hard work and innovation has surely paid off, as he has received more top national and international awards than any other cheesemaker in North America.
