St. Patrick's Day is nearly here, and what better way to celebrate than sharing some unique Irish beers and cheeses! Known for its high quality dairy, pristine grazing lands and clean air, Ireland is a natural destination for top notch cheesemaking. The influence the environment has on the cheesemaking process is huge, it truly translates through the animals, into the milk and helps to form the unique flavors in every bite.
Not only that, but Irish beer can be traced back to 5,000 years! Legend has it that Ireland's patron saint, St. Patrick, had his own personal brewer, a priest named Mescan who was his close friend. Ireland dominated the manufacture and supply of ale for centuries!
I wish I had a close friend who was my own personal brewer, imagine the discounts!
Cahill's Irish Farm Cheese has been farming and cheesemaking in the lush green pasturelands of Ireland for over four generations! They are one of the oldest artisanal cheese making families in Ireland and continue to innovate by combining traditional methods and original family recipes with modern technology.
In the 1860's Great Grand Uncle David Cahill, the man who would go on to start Cahill's Dairy Farm, emigrated to the US as a young man from North Cork, Ireland. By the turn of the century he became a successful business man owning his own bar and horse stables! In 1902, despite his great success in the US, David sold his business interests and returned to his native soil in Ireland to buy a farm in Newcastle West, Limerick. Since then the Cahill's Dairy Farm has been passed down to family members over the years, gradually growing and expanding their customer base! If you're truly intrigued in the family history of Cahill's Irish Farm Cheese take a look at their website here for their story.
Cahill's Irish Porter Cheese is arguably one of their most famous and best known cow's milk cheese. The 1980's was used for trial and error in developing blends and production methods. In 1985, they found the perfect blend and launched the world's first truly unique Irish Porter Cheese! This Porter is a medium strength cheese, dipped in brown wax to form a breathable rind that helps protect the cheese from drying out.
A delicious Irish cheddar combined with Porter and pressed by hand to form the wheel, with an appearance of a beautiful pale yellow marbled throughout the chocolate brown porter. Matured for 10 months and infused with a rich Irish porter to create a caramel, smokey undertone. The visual aspect of this cheese is super intriguing and attractive with its dramatic mosaic pattern.
Rich, tangy, and chocolatey with a pungent finish, this cheese demands a full bodied Irish beer with strong roasted malt flavors, such as the Guinness Extra Stout!
How splendid to pair a unique Irish cheese with a crisp Irish beer for St. Patrick's Day!
The aromas are balanced well with a roasty character and a subtle fermentation fruitiness. Perfectly well rounded flavors of bitter and smooth sweetness with a slight dry finish. This distinctively black full bodied Irish beer paired with Cahill's Irish Porter Cheese creates an unforgettable experience for your taste buds. As deep as the Guinness Extra Stout's color is its taste, and that crisp barley flavor compliments the tangy cheddar wonderfully.
Celebrate this St. Patrick's Day with a delicious Guinness Extra Stout Irish beer and Cahill's Irish Porter Cheese, enjoy this Irish holiday to the fullest! Irish you a happy St. Patrick's Day!
