Ingredients

- For the Dough:

- 1 ½ cups all-purpose flour

- ½ cup unsalted butter, chilled and cubed

- 1 tablespoon sugar

- 1/4 teaspoon salt

- 4-5 tablespoons ice water

- Optional: 1/2 cup shredded sharp cheddar cheese (for a cheesy crust)


- For the Filling:

- 4 medium apples (I recommend a mix of sweet and tart, like Honeycrisp and Granny Smith)

- 2 tablespoons brown sugar

- 1 teaspoon cinnamon

- 1 teaspoon fresh sage, finely chopped (plus extra for garnish)

- 1 tablespoon lemon juice

- Pinch of salt

- Optional: 1/2 cup shredded cheddar cheese (to sprinkle over the apple filling)


Instructions

1. Prepare the Dough:

- In a large bowl, mix the flour, sugar, and salt. If you’re adding cheddar, fold it in now. Add the cubed butter and blend until the mixture resembles coarse crumbs. Gradually add the ice water until the dough holds together. Shape it into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.


2. Craft the Filling:

3. Assemble the Galette:
