Ingredients
2 large apples (Granny Smith or Honeycrisp)
1/4 cup vegan butter
1/2 cup brown sugar
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp cinnamon
1 cup plant-based milk
1/3 cup vegetable oil
1 tsp vanilla extract
Directions
Preheat your oven to 350°F (175°C).
Sift the flour to remove lumps for a smooth texture.
Mix all dry ingredients (flour, baking powder, cinnamon) until evenly combined.
Create a well in the center of the dry ingredients to add wet ingredients (plant-based milk, oil, vanilla extract). Gently fold the wet and dry ingredients together to avoid overmixing.
Spread the caramel layer (vegan butter and brown sugar melted together) evenly on the bottom of the cake pan.
Arrange apple slices neatly over the caramel layer.
Pour the batter gently over the apple layer. Use a spatula to smooth the top for even baking.
Bake for 35-40 minutes. Perform a toothpick test to check doneness—insert it into the center of the cake; it should come out clean.
Let the cake cool for about 10 minutes before flipping it onto a serving plate.
